Creamy avocado and broccoli soup
Creamy avocado and broccoli soup made with oat cream. This is super easy to make and only takes a few minutes and perfect for a warming lunch at home.

Servings: 1-2 people
Do this:
Steam a bunch of organic broccoli in filtered water for a few minutes, add vegetable stock.
Add 1 avocado, fresh lemon juice, some oatly oat cream, salt, pepper and any fresh herbs like basil, thyme or parsley if you wish.
Add some olive-, avokado- and/or flax seed oil (high omega-3). Let it simmer a few minutes. Then mix with hand mixer or a blender.
Taste it and add more salt, pepper or lemon juice if needed.
Add chilli flakes on top if you want some spice.
