Poached egg with avocado mash

Perfect breakfast or light lunch. It’s anti-inflammatory with healthy fat from the avocado, egg, olive oil and the nuts from the seed bread. Loads of vitamin C and nutrients from the greens. The egg is a good protein source and an easy way to add protein to a meal.

Servings: 1 people

You need:

1 egg

1 avocado

Mixed greens - ruccola, watercress, spinach, fresh parsley

Olive oil

Fresh lemon juice

Salt, pepper and chilli flakes

Slice of toasted nut & seed bread (wheat and gluten-free)

Do this:

Mash the avocado and mix with chopped greens, olive oil, lemon juice, salt and pepper. taste.

Poach or soft boil the egg.

Serve the avocado mash on the toast with the egg and chilli flakes on top.
