Gluten and wheat free nut toast with mashed avocado and sardines, lemon and coriander
Paleo bread (gluten & wheat free) with smashed avocado, anchovies, chives and fresh coriander. Great Omega-3 boosting breakfast, snack or light lunch.

You need:
1 toasted slice seed bread (wheat and gluten free)
Fresh sardines in a glass jar (or canned ones)
1 avocado
Bunch of fresh coriander - chopped
Spring onions & chives - sliced
1 lemon - fresh squeezed juice
Do this:
Smash avocado and mix with lemonjuice, chopped spring onion and chives, salt and pepper.
Add avocado on toasted bread with sardines on top. Add chopped fresh coriander and fresh sqeezed lemon juice on top. Salt and pepper.
