Scrambled eggs with black beans, avocado and mayonnaise

 

I discovered this combination when travelling to Costa Rica (which i absolutely love btw). This is a really substantial, hight nutritious dish that makes you last forever (until the next meal). I have it either as a breakfast, brunch or lunch.

Prep time: 15 min

Servings: 1 person

You need:

2 eggs

2 spoons of cream

Butter

S+P

Black beans - already cooked or in a BPA free can or jar

1 avocado

Homemade mayonnaise or high quality ready-made

Chilli flakes

Red paprika powder

Do this:

Mix eggs, cream and salt and pepper. Cook in a pan with butter - make sure they are moist and not too overcooked.

Rinse black beans and serve on a plate with cut avocado, scrambled eggs, mayonnaise, chilli flakes and paprika powder.

You can also put it into a low carb tortilla wrap bread and serve it as a wrap.
